Light General Tso's Chicken
Ingredients: 3/4 cup low sodium chicken broth 2 Tbsp corn starch 2 Tbsp splenda 2 Tbsp lower sodium soy sauce 1 Tbsp white wine vinegar 1/2 Tsp ground ginger 2 medium scallions, chopped 2 garlic cloves, minced (I used the garlic in a jar) 1/2 tsp red pepper flakes 1 pound chicken breast, cut into bite size pieces (I used chicken breast tenderloins because they are thinner and cook faster) 2 Tsp canola oil | Directions: In a medium bowl, whisk together broth, corn starch, splenda, soy sauce, vinegar, and ginger. Set aside. Heat oil in skillet and sauté scallions, garlic, and pepper flakes for about 2 min. Add chicken and cook till brown, about 5 min. Add reserved sauce to pan and continue cooking until thickened and chicken is cooked through, about 3 min. Serve this alone or eat it over brown rice. Author's Note: I got this from the weight watchers web site as a core recipe This sounded wonderful. I went on Fitday and figured the nutritional count. This sounds SO good. This was my fave chinese food pre-op. Fried sweet stuff is not on the list these days! I will SO be trying this!
Yum, this sounds delicious! Chinese food is my favorite, and it's one those foods that I know that I will miss after I have my surgery. With recipes like this, it sounds like I can still have some of my favorite foods. :)
