So, I made my burrito bake casserole again... If you didn't see it the first time, you can check it out here... This time, though, once it was all layered up in the casserole dish, I got out my Cotija cheese that I bought for an Eggface recipe a bit back and crumbled it over top of the dish after I had the shredded Mexican cheese blend already added. Yummo!
